Couscous with Cherries, Feta, and Arugula

Ingredients

  • 300 g medium couscous
  • 300 g of hot water
  • 250 g of feta
  • 200 g of cherries
  • 80 g of almonds
  • 50 g almonds
  • 1 untreated lemon (zest)
  • extra virgin olive oil to taste
  • fine salt to taste
  • a pinch of ground black pepper

Preparation

Pour the cous cous into a bowl, add a pinch of salt, hot water and stir, cover and let rehydrate for 10 minutes. After the resting time has elapsed, shell it with a fork.

Cut the feta into cubes.

Wash the cherries, remove the stems and pits, then cut them in half or leave them whole, depending on your preference.

Wash the arugula, tear it into pieces if necessary, then combine the cherries, a pinch of salt, a pinch of pepper, and a drizzle of oil in a bowl, and toss to combine.

Combine the couscous and feta with the arugula, drizzle with a little more oil, and toss.

Add the almonds and grated lemon zest, stir, and serve.
