
Ingredients
- 350 g medium-grain couscous
- 350 ml of hot water
- 200 g basil pesto
- 300 g boiled potatoes
- 300 g of cooked green beans
- 20 g pine nuts
- Extra virgin olive oil
- Salt to taste

Method
Pour the couscous into a bowl, add a pinch of salt and the hot water, stir, cover, and let it rehydrate for 10 minutes.
After the resting time has elapsed, shell it with a fork.
Boil the potatoes and green beans, then dice the potatoes, place them in a bowl, add a pinch of salt and a drizzle of oil, and toss to combine.
Pour the couscous into a bowl, add the basil pesto and a drizzle of oil, then stir.
Add the green beans and potatoes to the couscous, then add the pine nuts and stir.
Place in the refrigerator for about an hour or until ready to serve
