
Ingredients
- 350 g of spinach couscous
- 350 g of hot water
- 4 medium eggs
- 100 g of cooked ham
- 40 g of grated cheese
- fine salt to taste
- 1 pinch of black pepper
- extra virgin olive oil to taste

Preparation
Pour the spinach couscous into a bowl, add a pinch of salt and then add the hot water, stir, cover and let rehydrate for 10 minutes.
After the resting time has elapsed, shell it with a fork.
Break the eggs into a bowl, add grated cheese, salt and pepper, and mix with a fork.
Pour a little oil into a frying pan and let it heat up, add the eggs and cook, stirring constantly for a couple of minutes .
Cut the ham into small pieces.
Pour the shelled cous cous into a bowl, add the ham, scrambled eggs, and a drizzle of oil, and mix.
Enjoy the couscous warm or store in the refrigerator to enjoy cold.
