Quick and easy recipe to satisfy the craving for dessert and offer a tasty snack to children: apple and couscous pancakes! The recipe is from our own Anna Attanasio, food blogger at Giallo Zafferano.
Ingredients:
- 50 g medium cous cous
- 50 g of warm milk
For the dough:
- 110 g of flour
- 30 g of caster sugar
- 1 medium egg
- 100 ml of milk
- 10 g seed oil or butter
- Grated peel of ½ untreated lemon
- seeds of half a vanilla bean or vanillin
- 1 teaspoon baking powder
- 200 g of apples
- enough peanut oil for frying
- caster sugar just enough for dusting
Procedure:
Add the hot milk to the cous cous stir, cover and let it rehydrate for 10 minutes. After the resting time has elapsed, shell it with a fork.
Crack the ‘egg into a bowl, add the vanilla and sugar and mix. Then add the oil or melted butter and grated lemon peel, continue stirring.
Add the sifted flour together with the baking powder, milk and mix until smooth and homogeneous.
Add the chopped apples and finally the shelled couscous and stir until incorporated into the mixture.
Heat peanut oil in a frying pan, take spoonfuls of the mixture and drop them into the hot oil.
Flip the pancakes so that they brown on both sides, then drain well and let them dry on kitchen paper to remove excess oil.
Roll them while still warm in granulated sugar, into which you can stir cinnamon powder according to taste.
