PANCAKES WITH CHOCOLATE AND COUSCOUS

A surprising mix of softness and character: our Pancakes with Chocolate and Couscous combine the comfort of traditional American comfort with the rich, versatile taste of Mediterranean cuisine.

Ingredients for 8 pancakes

  • 50 g medium cous cous Martino
  • 50 g of hot water
  • 1 medium egg
  • 50 g of caster sugar
  • 1 teaspoon vanilla extract (or the seeds of 1 berry or vanillin)
  • 20 g butter or high oleic sunflower seed oil
  • 150 ml of milk
  • 140 g of 00 flour
  • 1 level teaspoon of baking powder
  • 100 g of dark chocolate chips

To decorate

  • Fresh fruit as much as needed
  • Yogurt or cream
  • Honey or maple syrup

Preparation

Pour medium cous cous into a bowl, add hot water, stir, cover, and let rehydrate for 10 minutes. After the resting time has elapsed, shell it with a fork.

Break the egg into a bowl add the sugar, a pinch of fine salt and vanilla and start mixing add the melted butter or oil mix then also add the milk always continuing to mix until smooth.

Add the sifted flour and baking powder together mix to incorporate them into the dough.

Add the chocolate chips and previously rehydrated and shelled couscous and stir to incorporate into the mixture

Have a nonstick skillet red-hot and grease it with butter ( or oil), When the skillet is hot pour in a small ladleful of batter and cook over medium heat until bubbles form on the surface, gently turn the pancakes over, cook for a few more seconds then transfer them to a plate by stacking them on top of each other.

Fill pancakes with yogurt, fresh fruit, honey or maple syrup, cream, yogurt, butter, , peanut butter or jam and serve
